To help us comprehend the scope of the issues within the food system and food security project, a literature review was conducted. This allowed us to build an understanding around the current discourse for food system formalisation and modern food retail proliferation within the global south. The review focused on the following sections: food procurement formalization and proliferation in the global south, the traditional retail system context, determinants and patterns of the emergence of modern food retailing, impacts of a changing food system on food procurement patterns, and policy for the present: can supermarket procurement benefit rural farmers?
